New results show how expensive wheat gluten might be replaced by HP 300 in wet pet food chunks.
This is quite unique, as wheat gluten is widely used as one of the primary functional ingredients in wet pet food. Wheat gluten is – so to speak - the glue of the meat chunk and difficult to replace.
In this way we offer our pet food customers an opportunity to save costs on ingredients without sacrifying the quality of the pet food.
- Springiness (height recovery) is unaffected, with only a slight impact on chunk hardness (5-10% increase)
- Chunk hardness may be decreased by adding more water
- The unique water-binding capacity of HP 300 enhances the water-holding capacity of the final product, so no water leaks out of the chunks
This indicates that partial replacement of wheat gluten with HP 300 is possible without compromising textural properties.
